  • Anywhere

EXPERIENCE

Start your experience in a contemporary cooking studio in the eclectic Roma Norte neighborhood. Meet your chef instructor over a refreshing welcome drink of agua fresca (fruity non-alcoholic beverage). Enjoy coffee from selected Mexican beans or a special infusion while you prepare for the experience and learn about the history of Mexican cuisine.

Then, experience barrio-style living as you take a walking market tour to Mercado de Medellín. Learn about the history contained in the market’s halls. Savor quesadillas made from native corn at an organic tortillería, where you can view the traditional nixtamalization process. Learn about different chili varieties at a chili stand. Taste 100% raw cacao and hand-made artisanal chocolate from Oaxaca.

Discover the flavor of exotic bugs including crickets, chicatana (flying ants) and chinicuil (worms). Enjoy seasonal native fruits such as mamey, chicozapote, and tuna and indulge in hand-crafted ice cream.

After your market tour and tastings, return to the cooking studio for your hands-on cooking class. Prepare 10 Mexican salsas that you will roast, cook, fry, or make raw.

Once ready, enjoy your salsas with street food tacos and appetizers with a choice of fillings including cochinita pibil, cecina, roasted potatoes, scrambled eggs, sautéed mushrooms, cactus leaves, zucchini, fried beans, and quesadillas. Wash it down with agua fresca, artisanal mezcal, and Mexican craft beer.

You will learn how to prepare:

• Traditional guacamole
• Red molcajete sauce
• Green sauce
• Ranchera sauce
