Appetizers:
Polenta with porcini mushrooms and thyme
Pickled beef tongue with green sauce
Chianina tartare with crunchy artichoke salad
Pecorino flan with fig mustard

First Course:
Cappelletti in capon broth
Maltagliati pasta with white veal ragù and burrata mozzarella flakes

Second Course:
Piglet in porchetta shaded with Vernaccia di San Gimignano white wine
Cockerel stuffed with sausage and black cabbage with pea cream

Dessert:
Berry cheesecake and chocolate crumble
