Start your day with a pickup from your hotel in Seville. Travel to the Sierra of Aracena, a mountainous area north-west of Seville near to the Portuguese border. Learn about the production of Iberian ham and the importance of the acorn-fed variety.

First, visit a family-run farm in a beautiful setting to see how the pigs are reared and the importance that oak trees have. Then, go on to see the installations of one of the best ham producers in the town of Jabugo, a mythical name in Spain for fine ham.

Be shown around by an expert, who will explain the processes involved in the production of ham and of other products which come from the Iberian pig. Be amazed when you see the thousands upon thousands of ham that are hanging up and slowly curing.

At the end of the visit, taste the wonderful ham along with a glass of the best fino or manzanilla, a perfect pairing of food and wine. Afterward, go on to the town of Aracena where you will have a gourmet lunch at the finest restaurant in the area.

This restaurant has been known since early 1995 and the owners are great friends of the tour operator. All you do when you arrive is to sit down and wait for food to come, not knowing what they will serve you. Dishes might include asparagus, artichokes, wild mushrooms, cheese, acorn-fed Iberian pork, and many other possibilities that will change depending on the season, as everything is local.

The food will be accompanied by fine Spanish wine and end with some great dessert. After all the food, walk up to the castle on the hill before you head back to Seville.
