About Chef Jesse Griffiths:

Griffiths is a renowned hunter, angler, and chef, celebrated for his commitment to the conservation of wild game. He is the founder of the New School of Traditional Cookery, which champions sustainable practices in cooking. Griffiths earned a James Beard Award in 2022 for his cookbook, The Hog Book, which focuses on preparing wild game. Alongside Stackhouse, Griffiths is known for his work at Austin’s esteemed butchery and farm-to-table restaurant, Dai Due. At their venture, Lo Salvaje, they continue to promote their philosophy of sustainable wild game cuisine.

About Desert Door Distillery:

Desert Door was founded by three military veterans – Brent, Ryan, and Judson – who first happened upon the sotol plant on a trip to West Texas. Inspired by the rich 10,000-year history of sotol, the three set out to bring this unique wild spirit and its story back to prominence. Sotol is both the name of the distilled spirit and the plant that it’s made from.

Wild-harvested, distilled & bottled right here in Texas resulting in a spirit that’s more flavorful than tequila and softer than mezcal.
