Description

Create beautiful – and delicious – tarts made with ingredients usually reserved for American pies. In this three hour class, led by a French Pastry Chef, you’ll master kneading and shaping a sweet dough; making almond cream and a pecan praline; creating a creamy lemon filling; whipping up a meringue; and producing two stunning tarts. You’ll take your creations with you at the end of class.

ABOUT CHEF JIMMY MORNET

Jimmy Mornet apprenticed at Pâtisserie Renaud, a renowned family address in Saint-Gilles-Croix-de-Vie, where he was born, and continued his training at Chocolaterie Béline, in LeMans, under the direction of Jacques Bellanger (MOF) and Pâtisserie Laurent LeDaniel in Rennes (MOF). In 2007, he joined Maison Fauchon, followed by a position on the brigade at the Plaza Athénée Hotel. A creative and outstanding technician, Jimmy opened the Peninsula Hotel in 2014 and in 2016, Chef Mornet became Pastry Chef at the Park Hyatt Paris Vendome. After five years in the position, he moved to Nantes to become the Pastry Chef at Emma, where he oversees a team of 60 pastry chefs and manages all aspects of the company. In 2023, he founded ADN Sucre which offers consulting, masterclasses, and pastry and chocolate classes.

Always inspired by the contrast of colors, flavors, and textures, the Chef believes that flavor is the highest priority. He enjoys the challenge of reinventing the classics while remaining faithful to the quality and taste of the original.
