A hands-on class showcasing the versatility, history and cultural importance of the mighty plantain. Taste the Caribbean in three plates!

During this 2-hour session, Dr. Doug Sofer will lead you through cooking three plantain-focused preparations:

1) Maduros: Ripe, sweet plantains, cooked on a cast iron griddle. [30 minutes]

2) Patacones / Tostones: Savory, pressed, twice-fried plantains that serve as an underlying vehicle for highlighting many other Caribbean flavors [30 minutes]

3) Mofongo: An iconic side dish from Puerto Rico and the Dominican Republic featuring mashed plantains, garlic and a citrusy sauce. [45 minutes, plus additional time for eating and Q&A]

You will also read and discuss the historical, cultural and nutritional importance of plantains to many peoples of the Caribbean.

This course requires some basic knife skills. All three dishes are vegetarian.
